Assuming you haven't modified any core files, the database dumps (note 
that there are 2 database's, so ether 2 sql files, or 1 tar.gz file) 
will contain everything, except the Squid logs. If you need the squid 
logs, then you should back them up too.

/var/backups/grase should have nightly database dumps.

Just install a fresh grase, and once it's running, restore the database 
dump, and then make sure you login to the web interface and set the 
correct network interfaces (even if it looks correct, make sure you hit 
save), and then reboot to ensure it starts up correctly.
