I've just had a play with https://github.com/avanzu/AdminThemeBundle/ on my
symfony branch. Wow, it's crazy! I've only been using symfony for a little
while, and the way this theme is implemented brings a whole new world of
things I need to learn!

I'm not yet even sure how to progress, but will keep playing to try and
understand.

Your customisations you have made, are they just CSS overrides? I believe
if you can get them into a single CSS file, I can just load them as part of
the theme. Alternatively, if you have made lots of customisations, maybe we
should just turn it into a twig template?

Either way, my symfony branch is in git, and I'll be playing with it more
over the next few weeks!
