Hi Sheena
I beleive that in virtual surrounding you will need two physical NICs on 
host machine. Or you can add virtual NIC to grase but you will need more 
virtual clients for testing or need proper routing those virtual NICs . 
Unfortunately I can't help much here, because I never try to go virtual 
with Grase.
It is wasting resources in my opinion. "Bare metal" is the way to go here.

According the behavior and your blue note, it is obvious that 
installation didn't set networks properly.
